Thin Mint Puppy Chow & Pistachio Pudding Cookies!

For all of you that have extra Thin Mint cookies I have the perfect recipe to use those extra cookies up...Thin Mint Puppy Chow! It's also a great recipe to whip up for St. Patty's day with its green tinted chex mix. I brought this to work and it was a big hit with the chocolate & mint flavor!

I also tried out a new Pistachio Pudding Chocolate Chip cookie. They are a very heavy cookie; literally the dough was so thick it went to the top of my beaters. I would suggest if you make it leaving out the block of cream cheese because it didn't enhance the taste and weighed the dough down. The cookie ended up tasting like a sugar cookie with lots of chocolate chips. It wasn't a personal fav of mine, but if you like more the sugar cookie taste these would be a good one to try!
